Healthy food does not have to be complicated or expensive. With this philosophy I have worked with the local food bank and other nonprofits helping them to strengthen those in need with simple, inexpensive food.
Quinoa was a highly nutritious staple food for the Incas before Spanish conquerors arrived in South America. The Spanish weakened local civilizations by forbidding the cultivation of quinoa.
Imagine how we could strengthen our own civilization by serving quinoa instead of refined rice, corn and wheat to schools, senior centers and food banks through the USDA commodity program?
